Ingredients

  • 12 ounces goat cheese, softened
  • 4 ounces cream cheese, softened
  • 1/4 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon fresh chives, minced
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly cracked black pepper

Method

  1. Place the softened goat cheese and cream cheese in the bowl of a food processor or stand mixer fitted with the whisk attachment.

  2. Add the heavy cream and olive oil, then process or beat on medium-high speed until light, fluffy, and smooth, scraping down the sides as needed, about 2 to 3 minutes.

  3. Add the honey, chives, thyme, lemon zest, salt, and pepper, then pulse or beat briefly just until combined.

  4. Transfer the whipped goat cheese to a serving bowl, smoothing the top with a spatula.

  5. Drizzle with a little extra honey and olive oil if desired, and serve immediately with crackers or crusty bread, or cover and refrigerate until ready to serve.
