This smooth puree captures the floral sweetness of white peaches, lightly balanced with honey and lemon juice to brighten the flavor. It works well stirred into cocktails and sparkling drinks, spooned over yogurt, or swirled into desserts like sorbet and buttercream. A quick simmer softens the fruit and deepens its flavor before it's blended and strained to a smooth consistency.
Ingredients
- 4 white peaches, pitted and sliced
- 2 tablespoons honey
- 1 tablespoons fresh lemon juice
- 2 tablespoons water
- 1 pinch salt
Method
-
Combine the sliced peaches, honey, lemon juice, and water in a 6-quart saucepan over medium heat.
-
Bring to a gentle simmer, then reduce heat to low and cook, stirring occasionally, until the peaches soften and break down, about 8 minutes.
-
Remove from heat and let cool slightly, about 10 minutes.
-
Transfer the mixture to a blender and add a pinch of salt. Blend on high until completely smooth, about 1 minute.
-
Strain the puree through a fine-mesh sieve into a bowl, pressing with a spatula to remove skins and fibers.
-
Transfer the puree to a jar or airtight container and refrigerate until chilled, at least 1 hour, before using.
