Ingredients

  • 1 pound mixed wild mushrooms (cremini, shiitake, oyster), cleaned and sliced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves, plus extra for garnish
  • 2 tablespoons dry sherry
  • 2 ounces cream cheese, softened
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper, freshly ground
  • 24 water crackers or seeded crackers
  • 1 ounce Parmesan cheese, shaved

Method

  1. Melt the butter with the olive oil in a 9-inch skillet over medium heat.

  2. Add the shallot and cook, stirring occasionally, until softened, about 2 minutes.

  3. Add the mushrooms and cook, stirring occasionally, until they release their liquid and begin to brown, 8 to 10 minutes.

  4. Stir in the garlic and thyme and cook until fragrant, about 1 minute.

  5. Pour in the sherry and cook, scraping the skillet, until it evaporates, about 1 minute.

  6. Remove the skillet from the heat and stir in the cream cheese, salt, and pepper until the mixture is creamy and well combined.

  7. Let the mushroom mixture cool slightly, about 5 minutes, so it firms up enough to hold its shape on the crackers.

  8. Arrange the crackers on a serving platter and top each with a spoonful of the mushroom mixture.
