- 1 tablespoon yellow mustard seeds
- 1 tablespoon black peppercorns
- 1 teaspoon whole cloves
- 1 cinnamon stick, broken into pieces
- 1/4 cup ground turmeric
- 2 teaspoons ground ginger
- 1 teaspoon cayenne pepper
- 1 teaspoon fine sea salt

In a dry 9-inch skillet over medium heat, combine the coriander seeds, cumin seeds, fenugreek seeds, mustard seeds, peppercorns, cloves, and cinnamon stick pieces.
