Grated zucchini is salted and drained to remove excess moisture, then mixed with ranch seasoning, chives, and a light breading before air frying until golden and crisp. The air fryer keeps these fritters crunchy on the outside and tender inside with far less oil than pan-frying, making them a good appetizer or side dish for summer meals when zucchini is abundant.
Ingredients
- 2 pounds zucchini, grated
- 1 teaspoon salt, for draining zucchini
- 2 tablespoons ranch seasoning mix
- 2 tablespoons fresh chives, finely chopped
- 1/2 cup panko breadcrumbs
- 1/4 cup grated parmesan cheese
- 2 large eggs, lightly beaten
- 1/4 cup all-purpose flour
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil, for brushing
- 1/2 cup ranch dressing, for serving
Method
-
Place grated zucchini in a colander, toss with 1 teaspoon salt, and let sit 15 minutes to draw out excess moisture.
-
Transfer zucchini to a clean kitchen towel and squeeze firmly to remove as much liquid as possible.
-
In a large bowl, combine drained zucchini, ranch seasoning, chives, panko, parmesan, eggs, flour, and black pepper. Mix until evenly combined.
-
Scoop the mixture into 12 equal portions and shape each into a compact patty about 2 1/2 inches wide.
-
Preheat the air fryer to 375°F for 3 minutes.
-
Brush the air fryer basket with olive oil and arrange fritters in a single layer, leaving space between each.
-
Air fry at 375°F for 8 minutes, then flip fritters and continue cooking until golden brown and crisp, about 7 more minutes.
-
Cook the second side until golden and firm to the touch.
-
Remove fritters from the basket and repeat with any remaining batches.
-
