- 1/4 cup packed light brown sugar

- 1/4 cup buttermilk
- 3 tablespoons unsalted butter, melted

- 1/2 cup granulated sugar, for coating
- 1 teaspoon ground cinnamon, for coating
- 4 tablespoons unsalted butter, melted, for coating

Pour the apple cider into a small saucepan and bring to a boil over medium-high heat. Reduce heat to medium and simmer until reduced to about 1/2 cup, 15 to 18 minutes. Set aside to cool slightly.

Preheat oven to 350°F. Grease two 6-cavity donut pans with butter or nonstick spray.

In a large bowl, whisk together the all-purpose flour, buckwheat flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

In a separate bowl, whisk the egg, buttermilk, melted butter, vanilla extract, and the cooled reduced cider until smooth.

Pour the wet ingredients into the dry ingredients and stir just until combined; do not overmix.

Spoon the batter into a piping bag or a zip-top bag with the corner snipped off, and pipe into the donut pan cavities, filling each about three-quarters full.
