Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 cups chicken broth
  • 1 16 oz can diced tomatoes
  • 1 16 oz can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1/4 cup fresh cilantro, chopped
  • 1 whole lime, juiced

  • 1 whole avocado, diced
  • 1 package corn tortillas

Instructions

  1. Heat a large pot over medium heat and add some oil. Once hot, add the chopped onion and minced garlic, sautéing until they become translucent and fragrant, about 2 to 3 minutes.
  2. Place the chicken breasts in the pot along with the cumin and chili powder. Continue to cook until the chicken is thoroughly cooked and no longer pink in the center.
  3. Pour in the chicken broth, add the diced tomatoes, black beans, and corn. Increase the heat and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and let cook for 20 minutes.
  4. Carefully remove the chicken from the pot and use two forks to shred it. Return the shredded chicken to the pot.
  5. Stir in the chopped cilantro and squeeze in the juice from one lime. Adjust the flavor with salt and freshly ground pepper, if needed.
  6. For the tortilla strips, cut corn tortillas into thin strips. In a skillet, heat a thin layer of oil over medium-high heat and fry the strips until they are golden and crispy.
  7. Serve the hot soup in bowls, topped with the crispy tortilla strips and diced avocado. Optionally, add more fresh cilantro as a garnish.
