Cubes of sirloin marinate in a smoky chipotle blend before grilling on skewers with peppers and onion, then get brushed with a sticky honey glaze as they char. The result is tender, caramelized beef with a balance of heat and sweetness, ideal for weeknight grilling or backyard gatherings.
Ingredients
- 1 1/2 pounds beef sirloin, cut into 1 1/2-inch cubes
- 2 tablespoons chipotle peppers in adobo sauce, minced
- 3 tablespoons honey
- 3 tablespoons olive oil
- 2 tablespoons lime juice
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 red bell pepper, cut into 1 1/2-inch pieces
- 1 yellow bell pepper, cut into 1 1/2-inch pieces
- 1 red onion, cut into 1 1/2-inch pieces
- 2 tablespoons chopped fresh cilantro, for garnish
Method
-
In a large bowl, whisk together the minced chipotle peppers, 1 tablespoon of the honey, olive oil, lime juice, garlic, cumin, smoked paprika, salt, and black pepper.
-
Add the beef cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour, or up to 8 hours.
-
In a small bowl, stir together the remaining 2 tablespoons honey with 1 tablespoon of the marinade liquid to make a glaze; set aside.
-
Soak wooden skewers in water for 15 minutes if using, or prepare metal skewers. Preheat a grill or grill pan over medium-high heat.
-
Thread the marinated beef cubes onto the skewers, alternating with pieces of red bell pepper, yellow bell pepper, and red onion.
-
Grill the kebabs, turning every 2 to 3 minutes, until the beef is charred on the outside and cooked to medium doneness, about 10 to 12 minutes total.
-
During the last 2 minutes of grilling, brush the kebabs generously with the honey glaze, turning to coat evenly and allow slight caramelization.
-
Transfer the kebabs to a platter, sprinkle with chopped cilantro, and serve warm.
