Ingredients

  • 1 cup water
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 3 large eggs
  • 1/2 cup sugar
  • 1 tbsp ground cinnamon
  • 1 qt vanilla ice cream

Instructions

  1. Combine water, butter, granulated sugar, and salt in a saucepan. Bring to a boil.
  2. Reduce heat, add flour, and stir continuously until a smooth dough forms and pulls away from the sides of the pan.
  3. Remove from heat and allow the dough to cool for a few minutes. Then, add eggs one at a time, stirring well after each addition until fully incorporated.
  4. Transfer the dough into a piping bag fitted with a star nozzle. Pipe the dough into 3-inch swirled logs onto a tray.
  5. Heat oil in a deep frying pan to 350°F (175°C). Fry the churros in batches until golden brown, about 2 to 3 minutes per side.
  6. Mix remaining sugar and cinnamon in a shallow dish. Coat the hot churros in the cinnamon sugar mixture until well coated.
  7. Let churros cool completely on a wire rack.
  8. Scoop vanilla ice cream onto one churro and gently press another churro on top to form a sandwich. Serve immediately.
