- 1 pound large shrimp, peeled and deveined, tails on
- 1/2 cup all-purpose flour

- 1 cup sweetened shredded coconut
- 1 cup panko breadcrumbs
- 1 quart vegetable oil, for frying
- 1 cup mango, peeled and diced
- 2 tablespoons mayonnaise
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 1/2 teaspoon sriracha
- 1/8 teaspoon salt

Puree the diced mango, mayonnaise, rice vinegar, honey, sriracha, and 1/8 teaspoon salt in a blender until smooth. Transfer to a small bowl, cover, and refrigerate until ready to serve.

Set up a dredging station: place the flour, salt, and pepper in one shallow bowl, whisk the eggs in a second bowl, and combine the shredded coconut and panko in a third bowl.
