  • 1 pound ground beef (80/20)
  • 1/2 cup yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup water
  • 2 tablespoons tomato paste
  • 8 small flour or corn tortillas, warmed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded iceberg lettuce
  • 1 cup diced tomato
  • 1/2 cup sour cream
  • 1/4 cup diced white onion

Method

  1. Heat a 9-inch skillet over medium heat and add the ground beef, breaking it up with a spatula.

  2. Cook the beef, stirring occasionally, until browned and no pink remains, about 7 minutes.

  3. Drain excess grease from the skillet, leaving about 1 tablespoon behind for flavor.

  4. Add the diced onion and garlic to the skillet and cook until softened and fragrant, about 3 minutes.

  5. Stir in the chili powder, cumin, smoked paprika, oregano, salt, pepper, and cayenne, coating the beef evenly.

  6. Add the water and tomato paste, stirring until smooth and combined.

  7. Simmer the mixture uncovered until slightly thickened and most of the liquid has absorbed, about 5 minutes.

  8. Warm the tortillas in a dry skillet or microwave until pliable.
