Boneless turkey breast marinates in orange juice, chipotle, and garlic before cooking over indirect heat until smoky and tender. The citrus-chile glaze caramelizes on the grill for a sweet, spicy crust that suits weeknight dinners or warm-weather entertaining.

Ingredients

  • 1 pounds boneless skinless turkey breast
  • 3/4 cup fresh orange juice
  • 2 tablespoons orange zest
  • 3 tablespoons chipotle peppers in adobo sauce, minced
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh cilantro, chopped, for garnish
  • 1 orange, sliced, for garnish

Method

  1. Place the turkey breast in a large resealable bag or shallow dish and pour in the marinade, turning to coat evenly.

  2. Refrigerate and marinate the turkey breast for at least 2 hours, turning once halfway through.

  3. Remove the turkey from the refrigerator and let it sit at room temperature for 20 minutes before grilling.

  4. Preheat the grill for two-zone cooking, heating one side to high (450°F) and leaving the other side on low or unlit for indirect heat.

  5. Remove the turkey from the marinade, letting excess drip off, and reserve the marinade in a small saucepan.

  6. Sear the turkey breast over direct high heat for 2 to 3 minutes per side until well marked.

  7. Move the turkey to the indirect side of the grill, close the lid, and cook for 30 to 40 minutes, turning occasionally, until an instant-read thermometer inserted into the thickest part reads 165°F.

  8. While the turkey grills, bring the reserved marinade to a boil in a small saucepan, then reduce heat and simmer for 5 minutes until slightly thickened.

  9. Brush the cooked marinade glaze over the turkey breast during the last 5 minutes of grilling.

  10. Transfer the turkey to a cutting board and let it rest for 10 minutes before slicing.

  11. Slice the turkey breast against the grain, garnish with cilantro and orange slices, and serve.
