This recipe builds a simple yeasted dough from scratch, then tops it with classic marinara, mozzarella, and your choice of toppings before baking at high heat for a crisp crust and bubbly cheese. It works well for weeknight dinners or weekend gatherings where everyone customizes their own pie. A short rise and a very hot oven are the keys to pizzeria-style results at home.
Ingredients
- 3 cups all-purpose flour
- 1 packet active dry yeast (2 1/4 teaspoons)
- 1 teaspoon granulated sugar
- 1 1/4 teaspoons salt
- 1 1/8 cups warm water (about 110°F)
- 2 tablespoons olive oil, plus more for bowl
- 1 cup marinara sauce
- 2 1/2 cups shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1 teaspoon dried oregano
- toppings of choice (pepperoni, sliced bell pepper, red onion, mushrooms), as desired
- 2 tablespoons cornmeal, for dusting
- fresh basil leaves, for garnish
Method
-
In a large bowl or stand mixer, combine warm water, sugar, and yeast. Let sit until foamy, about 5 minutes.
-
Add flour, salt, and olive oil to the yeast mixture. Mix and knead until a smooth, elastic dough forms, about 8 minutes.
-
Shape dough into a ball, place in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm spot until doubled in size.
-
Preheat oven to 475°F. If using a pizza stone, place it in the oven while preheating.
-
Punch down the dough and divide into two equal portions. On a lightly floured surface, roll or stretch each portion into a 12-inch round.
-
Dust a pizza peel or baking sheet with cornmeal and transfer the dough rounds onto it.
-
Spread 1/2 cup marinara sauce evenly over each dough round, leaving a 1/2-inch border for the crust.
-
Sprinkle each pizza with mozzarella and parmesan, then add desired toppings and a pinch of dried oregano.
-
Bake until the crust is golden brown and the cheese is bubbling, 10 to 12 minutes.
-
Remove from oven, let cool for 2 minutes, then top with fresh basil leaves before slicing.
