Ground beef is browned with a quick taco-style seasoning, then folded into tortillas with melted cheese and griddled until golden and crisp. A fast weeknight dinner that comes together with pantry staples and is easily customized with extra toppings like salsa or sour cream.
Ingredients
- 1 pound ground beef
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 2 tablespoons taco seasoning
- 1/4 cup water
- 8 flour tortillas (8-inch)
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 tablespoons vegetable oil
- 1/4 cup chopped fresh cilantro
- 1 cup salsa, for serving
- 1/2 cup sour cream, for serving
Method

Heat a 9-inch skillet over medium-high heat and add the ground beef, breaking it up with a spatula.

Cook the beef, stirring occasionally, until browned and no longer pink, about 6 to 8 minutes.

Add the onion and garlic to the skillet and cook until the onion softens, about 3 minutes.

Stir in the taco seasoning and water, scraping up any browned bits. Simmer until the liquid thickens slightly, about 3 minutes, then remove from heat.

Wipe out the skillet and set it over medium heat. Lay one tortilla flat in the skillet.

Sprinkle a quarter of the combined cheddar and Monterey Jack cheese over half of the tortilla, top with a portion of the beef mixture and a sprinkle of cilantro, then fold the tortilla in half over the filling.

Brush or drizzle a little oil into the skillet and cook the folded quesadilla until golden brown and crisp on the bottom, about 2 to 3 minutes.

Flip carefully and cook the second side until golden and the cheese is fully melted, about 2 minutes.

Transfer to a cutting board and repeat with the remaining tortillas, cheese, and beef mixture, adding oil to the skillet as needed.

Cut each quesadilla into wedges and serve warm with salsa and sour cream.
