These soft pretzels get their deep brown color and chewy crust from a classic baking soda bath, then get showered with everything bagel seasoning before baking. Twisting the dough into the traditional pretzel shape takes a little practice, but the payoff is a bakery-style snack perfect for game day or an afternoon treat with mustard for dipping.
Ingredients
- 1 1/2 cups warm water (110°F)
- 1 tablespoon granulated sugar
- 2 1/4 teaspoons active dry yeast (1 packet)
- 4 cups all-purpose flour
- 1 teaspoon salt
- 4 tablespoons unsalted butter, melted
- 10 cups water
- 2/3 cup baking soda
- 1 large egg, beaten (for egg wash)
- 3 tablespoons everything bagel seasoning

In a large bowl or stand mixer bowl, combine the warm water, sugar, and yeast. Let sit until foamy.

Add the flour, salt, and melted butter to the yeast mixture. Mix and knead with a dough hook or by hand until a smooth, elastic dough forms, about 7 minutes.

Shape the dough into a ball, place in a lightly oiled bowl, cover, and let rise in a warm spot until doubled in size.

Preheat the oven to 450°F. Line two baking sheets with parchment paper.

Punch down the dough and divide into 8 equal pieces. Roll each piece into a 24-inch rope.

Shape each rope into a pretzel by forming a U, crossing the ends over each other twice, then folding them down onto the bottom of the U.

Bring the 10 cups of water to a boil in a 6-quart saucepan, then stir in the baking soda carefully, as it will foam.

Working one or two at a time, boil each pretzel for 30 seconds, then remove with a slotted spatula and place on the prepared baking sheets.

Brush each boiled pretzel generously with the beaten egg wash, then sprinkle evenly with everything bagel seasoning.

Bake until deep golden brown, 12 to 15 minutes, rotating the pans halfway through.
