Roasted sweet potatoes and black beans get a smoky kick from cumin and chili powder, then melt into cheese between griddled flour tortillas. A mild guacamole, light on heat, cools each bite and adds creamy contrast. These come together quickly on a weeknight and work equally well as a light dinner or shareable appetizer.
