These tostadas start with corn tortillas fried until crisp, then layered with refried beans, seasoned ground beef, shredded lettuce, and crumbled cheese. A staple of Mexican home cooking, they make a satisfying weeknight dinner that lets everyone build their own with favorite toppings.

Ingredients

  • 8 corn tortillas
  • 1/2 cup vegetable oil, for frying
  • 1 pound ground beef
  • 1/2 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1/4 cup water
  • 2 cups refried beans
  • 2 cups shredded iceberg lettuce
  • 1 cup diced tomato
  • 1 cup crumbled queso fresco
  • 1/2 cup sour cream
  • 1 avocado, sliced
  • 1/4 cup salsa
  • 1/4 teaspoon salt
  • 1 lime, cut into wedges

Method

  1. Heat the vegetable oil in a 9-inch skillet over medium-high heat until shimmering, about 350°F.

  2. Fry the corn tortillas one at a time, turning once, until golden and crisp, about 1 minute per side. Transfer to a paper towel-lined plate and sprinkle lightly with salt.

  3. In a separate skillet over medium heat, cook the ground beef and onion, breaking up the meat, until browned and no pink remains, about 8 minutes.

  4. Add the garlic and taco seasoning, stir for 30 seconds, then pour in the water. Simmer until the sauce thickens slightly, about 5 minutes.

  5. Warm the refried beans in a small saucepan over low heat, stirring occasionally, until heated through, about 5 minutes.

  6. Spread a layer of refried beans on each crisped tortilla.

  7. Top with the seasoned ground beef, shredded lettuce, diced tomato, and crumbled queso fresco.

  8. Finish with a dollop of sour cream, avocado slices, and a spoonful of salsa. Serve immediately with lime wedges.
