Ingredients
- 1 1/2 pounds boneless skinless chicken thighs, diced
- 2 tablespoons taco seasoning
- 2 tablespoons olive oil
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tablespoon lime juice
- 2 tablespoons cilantro, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup cherry tomatoes, halved
- 1 cup shredded lettuce
- 1 cup shredded cheddar cheese
- 1 avocado, sliced
- 1/2 cup salsa
- 1/4 cup sour cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Rinse the rice under cold water, then combine with chicken broth in a 6-quart saucepan. Bring to a boil, cover, reduce heat to low, and simmer until tender.

Remove rice from heat, stir in lime juice and cilantro, and set aside covered.

Pat the diced chicken thighs dry and toss with taco seasoning, salt, and pepper until evenly coated.

Heat olive oil in a 9-inch skillet over medium-high heat. Add the chicken in a single layer and sear, stirring occasionally, until browned and cooked through, about 8 minutes.

Warm the black beans and corn together in a small saucepan over medium heat, stirring occasionally, until heated through.
