Balochi Sajji (بلوچی سجی)

Ingredients

  • 2 lbs whole chicken, cleaned and gutted
  • 1/4 cup yogurt
  • 2 tbsp lemon juice
  • 2 tsp paprika
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • salt
  • pepper

Instructions

  1. In a bowl, combine yogurt, lemon juice, paprika, cumin powder, coriander powder, turmeric powder, and garam masala to make the marinade.
  2. Add salt and pepper to taste, then mix well until all ingredients are combined.
  3. Rub the marinade evenly over the chicken, including inside the cavity, for an even coating.
  4. Cover the marinated chicken and refrigerate for at least 4 hours, or overnight, to let the flavors meld.
  5. Preheat the grill or oven to 375°F (190°C).
  6. Place the marinated chicken onto a roasting spit or a baking tray.
  7. Cook over the grill or in the oven for about 1 hour, turning occasionally, until the chicken is fully cooked and the skin is golden brown.
  8. Remove the chicken from the heat and let it rest for a few minutes to retain its juices.
  9. Serve the Balochi Sajji hot with rice, accompanied by grilled vegetables and a yogurt-based sauce.
