Chargha (چرغہ)

Ingredients

  • 1 whole chicken, cleaned and patted dry

  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 2 Tbsp lemon juice
  • 2 Tbsp oil

Instructions

  1. In a bowl, combine plain yogurt, ginger garlic paste, red chili powder, turmeric powder, garam masala, lemon juice, and oil to form a marinade.
  2. Make deep cuts in the chicken. Rub the marinade over the chicken, ensuring that the marinade penetrates the cuts. Let it marinate for at least 4 hours or overnight in the refrigerator.
  3. Preheat the oven to 400°F (200°C). Place the marinated chicken on a baking tray and roast for 1 hour, basting with additional oil occasionally, until cooked through.
  4. Increase the oven temperature to 450°F (230°C). Roast the chicken for another 15-20 minutes, or until the skin becomes crispy and golden brown.
  5. Remove the chicken from the oven and let it rest for a few minutes before carving. Serve with naan, rice, or salad.
