Sajji is a traditional dish from the Balochistan region of Pakistan, celebrated for its aromatic roasted chicken. The dish centers around a unique marination process, where a whole chicken is infused with spices, yogurt, and lemon juice before being slow-roasted. Typically served with naan and chutney, Sajji offers a genuine taste of Pakistani cuisine. Whether it is cooked over an open flame or in the oven, the chicken remains tender and juicy, brimming with rich flavors.
Ingredients
- 1 whole chicken
- 1/2 cup yogurt
- 2 Tbsp lemon juice
- 2 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp red chili powder
- 1 tsp garam masala
- salt
Instructions
- Clean the chicken and make deep cuts all over the surface to help the marinade penetrate.
- In a bowl, mix the yogurt, lemon juice, coriander powder, cumin powder, red chili powder, garam masala, and salt to create the marinade.
- Rub the marinade thoroughly over the chicken, ensuring it gets into the cuts.
- Place the marinated chicken in the refrigerator for at least 4 hours, or overnight for best results, to allow flavors to develop.
- Preheat the oven to 375°F (190°C).
- Place the marinated chicken on a roasting rack and roast in the oven for 1 hour, occasionally basting it with leftover marinade to keep it moist.
- Once the chicken is cooked through and golden brown, remove it from the oven and let it rest for about 10 minutes before carving.
- Serve the Sajji warm with naan and chutney.
