Ingredients
- 2 cups heavy cream
- 4 bags earl grey tea
- 5 large egg yolks, whisked
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat the oven to 325°F (160°C).
- Place a saucepan on medium heat and pour in the heavy cream. Add the Earl Grey tea bags to the cream and heat until it is just about to boil. Remove from heat and allow the tea to steep for 10 minutes, then remove the tea bags.
- In a separate bowl, whisk the egg yolks and sugar together until the mixture becomes pale and slightly thickened. While whisking, gradually add the steeped cream to avoid curdling.
- Gently mix in the vanilla extract and salt with the cream mixture, ensuring it is well incorporated. Strain the entire mixture through a sieve to ensure smoothness.
- Pour the strained mixture into ramekins, filling them up to three-quarters. Place these ramekins in a baking dish, and carefully pour hot water into the dish until it reaches halfway up the sides of the ramekins.
- Place the baking dish in the preheated oven and bake for 30-35 minutes. The custards should be set but slightly wobbly in the middle. Remove from the oven and let cool at room temperature before refrigerating. Chill the custards for at least 2 hours.
- To finish, evenly sprinkle brown sugar on top of each chilled custard. Using a kitchen torch, caramelize the sugar until it forms a hard, golden crust. Allow to rest for a few minutes to let the sugar crust harden.
- Serve the Creme Brûlée once the sugar crust has set.
