Matcha Chia Pudding with Coconut and Berries

Ingredients

  • 1/4 cup chia seeds, soaked
  • 1 cup coconut milk
  • 1 tbsp matcha powder
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup shredded coconut, toasted
  • 1/2 cup mixed berries, for topping

  1. Combine chia seeds with coconut milk and let soak in the refrigerator for at least 4 hours or overnight, allowing the chia seeds to fully absorb the liquid and swell.
  2. In a separate bowl, whisk together the matcha powder, maple syrup, and vanilla extract until well combined.
  3. Mix the matcha mixture with the soaked chia seeds until thoroughly combined.
  4. Spoon the mixture into serving jars and refrigerate for at least 2 hours to set.
  5. Just before serving, top each jar with toasted shredded coconut and a generous portion of mixed berries.
