  • 1 1/2 cups milk

  • 1 Tbsp orange zest

  1. In a large mixing bowl, whisk together eggs, milk, flour, and sugar until smooth.
  2. Heat a non-stick skillet over medium heat and melt a small amount of butter.
  3. Pour a ladleful of batter into the skillet, swirling to create a thin, even layer.
  4. Cook the crêpe for about 2 minutes, then flip and cook for another minute.
  5. Repeat the cooking process with the remaining batter to make around 12 crêpes.
  6. In a separate pan over medium heat, melt butter and sugar to make the sauce, then add the orange liqueur and orange zest, stirring to combine.
  7. Place a crêpe in the sauce, fold it in quarters, and carefully flambe with a bit of extra orange liqueur until the alcohol burns off.
  8. Repeat the saucing and flambéing process with the remaining crêpes and serve immediately.
