One-Pot Chili Mac

This satisfying Chili Mac blends the rich flavors of chili with the comforting texture of macaroni and the nutritional benefits of beans, making it a substantial meal. Easy to prepare in one pot, this recipe is suitable for both hectic weeknights and relaxing weekend dinners. Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 16 oz can diced tomatoes
  • 1 16 oz can kidney beans, drained and rinsed
  • 2 cups elbow macaroni
  • 4 cups beef broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Shredded cheese, for topping
  • Sour cream, for topping
  • Cilantro, leaves chopped, for topping

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Remove and discard any excess fat.
  2. Add the onion and garlic to the pot. Sauté for 3 to 4 minutes until the onion becomes translucent.
  3. Add the tomatoes, beans, macaroni, and broth, stirring to combine, then add the spices
  4. Bring the mixture to a boil. Once boiling, reduce the heat to a simmer, cover, and let cook for about 20 minutes.
  5. Stir occasionally to prevent sticking, until the macaroni is tender and the flavors have combined effectively. Adjust the seasoning if necessary.
  6. Top with shredded cheese, a dollop of sour cream, and a sprinkle of cilantro. Serve warm.
