  • 2 cup rhubarb, diced
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch

  1. Preheat the oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper.

  3. Press two-thirds of the crumb mixture evenly into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, gently toss the diced strawberries and rhubarb with the granulated sugar and cornstarch until well coated.
  5. Spread the fruit mixture evenly over the crust in the baking dish.
  6. Sprinkle the remaining crumb mixture over the top of the fruit layer, ensuring even coverage.
  7. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the fruit filling is bubbly. Allow the bars to cool completely in the dish on a wire rack before cutting into squares and serving.
