Instructions

  1. Rub duck legs with salt, crushed peppercorns, minced garlic, and sprigs of fresh thyme. Refrigerate for at least 6 hours or overnight to allow flavors to deepen.
  2. Preheat the air fryer to 300°F (150°C). Rinse the marinated duck legs to remove excess salt and pat them dry with paper towels.
  3. In a saucepan, melt the duck fat over low heat. Once melted, submerge the duck legs in the fat. Place in the air fryer and cook at 300°F (150°C) for 30 minutes.
  4. Increase the air fryer temperature to 400°F (200°C). Carefully remove the duck legs from the fat and return them to the air fryer. Cook for an additional 10-15 minutes until the skin is crispy and golden brown.
  5. In a skillet, heat the olive oil over medium-high heat. Sear the duck legs skin-side down for about 2 minutes until they achieve a golden crust.
  6. Plate the duck legs and serve while hot.
