Ingredients

  • 2 lbs beef bones
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp ginger, grated
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp paprika
  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • 6 cups water

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place beef bones on a baking sheet and roast for 30 minutes until browned.
  3. In a large pot, sauté onions, garlic, and ginger until fragrant, about 3 to 4 minutes.
  4. Add roasted beef bones, turmeric, cumin, coriander, and paprika; stir well.
  5. Pour in water and bring to a boil. Reduce heat and simmer for 2 hours, occasionally skimming off any foam.
  6. Add carrots and celery; continue simmering for another hour until vegetables are tender.
  7. Taste, then season with salt and pepper as needed.
