Ingredients

  • 2 cups yellow split peas

  • 4 cups vegetable broth
  • 2 tbsp oil

Instructions

  1. Soak the yellow split peas in water for at least 4 hours or overnight.
  2. In a large pot, heat the oil over medium heat. Add the onions and garlic, and sauté for 3 to 5 minutes until soft.
  3. Stir in the turmeric and paprika, and cook for another minute until fragrant.
  4. Add the soaked split peas and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 45 to 50 minutes until the peas are tender.
  5. Mash some of the peas with the back of a spoon to thicken the stew.
