  • 1 tsp vanilla extract
  • 4 oz cream cheese
  • 1/2 cup butter
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, mix together the grated carrots, pecans, all-purpose flour, sugar, vegetable oil, eggs, baking soda, cinnamon, salt, and vanilla extract until well combined.
  3. Pour the batter into the prepared baking pan.
  4. Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  5. While the cake is baking, prepare the cream cheese frosting by beating the cream cheese and butter together in a medium bowl until smooth.
