Ingredients

  • 1 bunch spinach, stems removed
  • 1/2 cup walnuts, chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp coriander, ground
  • 1/4 tsp cayenne pepper
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar

Instructions

  1. Blanch the spinach in boiling water for 1–2 minutes, then drain and squeeze out excess water. Chop the spinach finely and place it in a large bowl.
  2. In a food processor, pulse the walnuts until finely ground. Add the walnuts to the bowl with the spinach.
  3. Add the onion, garlic, cilantro, parsley, coriander, cayenne pepper, and salt to the bowl. Mix well to combine.
  4. In a small bowl, whisk together the olive oil and red wine vinegar. Pour the dressing over the spinach mixture and toss to coat evenly.
  5. Refrigerate the Pkhali for at least 1 hour to allow the flavors to meld. Serve chilled.
