  • 4 whole chicken thighs
  • 6 slices bacon, sliced
  • 1 whole onion, chopped
  • 2 whole carrots, sliced
  • 2 cloves garlic, minced
  • 1 cup red wine
  • 1 cup chicken broth
  • 2 sprigs fresh rosemary
  • 1 tbsp olive oil

Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy. Set bacon aside on a paper towel-lined plate.
  2. Season chicken thighs with salt and pepper. Increase skillet heat to medium-high and brown chicken on both sides. Set chicken aside.
  3. In the same skillet, reduce heat to medium and add onion, carrots, and garlic. Sauté for 5 minutes or until softened.
  4. Pour in the red wine and chicken broth, stirring to release browned bits from the skillet.
  5. Return chicken and bacon to the skillet and add rosemary sprigs.
  6. Cover and simmer on low heat for 1.5 hours or until chicken is tender and cooked through.
