Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Dredge the lamb in the flour, ensuring each piece is well-coated and shaking off any excess.
  3. Heat olive oil in a Dutch oven over medium-high heat. In batches, brown the lamb on all sides, then set aside on a plate.

  7. Remove the pot from the oven and stir in the frozen peas and chopped fresh mint. Cook on the stovetop over medium heat for an additional 5 minutes until the peas are heated through.
  8. Taste and adjust the seasoning with salt and pepper before serving.
