French onion soup is a classic dish that transforms simple onions into a rich, flavorful experience. This recipe involves caramelizing onions to reveal their natural sweetness, then simmering them in a savory broth to create a delicious, hearty soup. The crispy, cheesy bread topping adds a delightful crunch to each spoonful, making it an excellent choice for a warm, comforting meal during cold weather.

Ingredients

  • 4 large onions, thinly sliced
  • 2 Tbsp butter
  • 1 Tbsp olive oil
  • 1 tsp sugar
  • 8 cups beef broth
  • 1/2 cup dry white wine
  • 1 Tbsp balsamic vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 slices baguette
  • 1 1/3 cups Gruyere cheese, grated

Instructions

  1. In a large pot, melt the butter and olive oil over medium heat.
  2. Add the sliced onions and sugar. Cook, stirring occasionally, for about 45 minutes until onions are caramelized and deep brown in color.
  3. Deglaze the pot with white wine and balsamic vinegar, scraping up any browned bits from the bottom of the pot.
  4. Add the beef broth, salt, and pepper. Bring to a simmer and cook for 1 hour, allowing the flavors to meld.
  5. Preheat the broiler in your oven to high.
  6. Ladle the soup into oven-safe bowls, then top each bowl with a slice of baguette and grated Gruyere cheese.
  7. Place the bowls on a baking sheet and broil until the cheese is melted and bubbly, about 2-3 minutes. Watch closely to prevent burning.
