Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion, sliced carrots, and diced zucchinis. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
- Add the green beans, vegetable broth, and diced tomatoes to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes to blend the flavors.
