  • 1 whole zucchini, sliced
  • 1 whole yellow bell pepper, sliced
  • 1 whole red onion, sliced
  • 1 whole eggplant, sliced
  • 4 slices mozzarella cheese
  • 4 slices whole wheat bread
  • 1/4 cup olive oil
  • 1 tsp Italian Seasoning

Instructions

  1. Preheat the grill to medium-high heat (375°F – 190°C).
  2. In a bowl, combine the sliced zucchini, bell pepper, red onion, and eggplant with the olive oil and Italian Seasoning.
