Ingredients
- 1 15 oz can chickpeas, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup red onion, diced
- 2 cloves garlic, minced
- 1/4 cup parsley, chopped
- 1 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 2 tbsp olive oil
- 1/2 cup Greek yogurt
- 1/2 cucumber, grated and excess water squeezed out
- 1 clove garlic, minced
- 1 tbsp fresh dill, chopped
- 1 tbsp lemon juice
Instructions
- In a food processor, combine chickpeas, breadcrumbs, red onion, 2 cloves of minced garlic, parsley, cumin, paprika, cayenne pepper, and 1/2 tsp of salt. Pulse until the mixture comes together but remains slightly chunky.
- Shape the mixture into patties, about 1/2-inch thick, and place them on a plate. Cover and refrigerate for 15 minutes to help them firm up.
- Preheat the air fryer to 375°F (190°C).
- Lightly brush both sides of the patties with olive oil.
- Place the patties in the air fryer basket in a single layer, making sure they don’t touch. Air-fry for 10 minutes, then carefully flip them and air-fry for another 8-10 minutes until they are golden brown and crispy.
- While the patties are cooking, prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, 1 clove of minced garlic, dill, lemon juice, and a pinch of salt and pepper in a bowl. Stir until well combined and adjust seasoning as needed.
- Serve the warm chickpea patties with tzatziki sauce on the side, ready to dip and enjoy immediately.
