  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a skillet over medium heat. Add the sliced shallots and cook for about 15 minutes until they are caramelized, stirring occasionally to prevent burning.
  3. In a large pot, bring water to a boil and add the cubed sweet potatoes. Boil for 15-20 minutes until they are tender. Drain the water.
  4. Transfer the cooked sweet potatoes to a mixing bowl. Add the crumbled goat cheese, fresh thyme leaves, caramelized shallots, and a pinch of salt. Mash the ingredients together until smooth and well combined.
  5. Spoon the mashed sweet potato mixture into a baking dish and spread evenly. Bake in the preheated oven for 20 minutes until heated through.
