Roasted Garlic and Herb Butter Turkey

Ingredients
- 1 whole 12-14 pound turkey, thawed if frozen
- 1 cup unsalted butter, softened
- 4 cloves garlic, roasted and minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh sage, chopped
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat the oven to 325°F (165°C).
- In a bowl, combine the softened butter, roasted garlic, chopped rosemary, thyme, sage, salt, and pepper.
- Pat the turkey dry with paper towels and carefully loosen the skin from the breast and thigh meat, using your fingers.
- Evenly spread half of the herb butter mixture under the skin, then rub the remaining mixture over the outside of the turkey.
- Place the turkey breast-side up on a rack in a roasting pan.
- Roast for approximately 15 minutes per pound, occasionally basting with pan juices for added moisture.
- The turkey is cooked when a meat thermometer inserted into the thickest part of the thigh registers 165°F (75°C).
- Once done, allow the turkey to rest for 20 minutes before carving to let the juices redistribute.
