Ingredients
- 2 spaghetti squash, halved and seeded
- 1 cup cottage cheese
- 2 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup parmesan cheese, grated
Instructions
- Preheat your oven to 400°F (200°C).
- Drizzle olive oil over the cut sides of the spaghetti squash and place them cut side down on a baking sheet.
- Roast the squash in the oven for 40-45 minutes or until tender.
- In a skillet, heat a tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute.
- Add the chopped spinach to the skillet and cook until wilted, about 3 minutes. Remove from heat.
- In a bowl, combine the cottage cheese, sautéed spinach, cherry tomatoes, salt, and black pepper.
- Once the squash is cooked and slightly cooled, use a fork to scrape the flesh into strands while keeping it inside the squash skin.
- Add the cottage cheese mixture evenly into each squash half over the strands.
- Sprinkle the grated parmesan cheese on top.
- Return the stuffed squash halves to the oven and bake for an additional 10-15 minutes until the cheese is bubbling and golden brown.
- Serve hot, garnished with extra parmesan if desired.
