  • 4 cups vegetable broth
  • 1 14 oz can diced tomatoes
  • 2 cups spinach, chopped
  • salt and pepper
  • 2 Tbsp oil

  1. Heat the oil in a large pot over medium heat.
  2. Add the diced onion, minced garlic, and grated ginger. Cook until softened, about 5 minutes.
  3. Stir in the garam masala and turmeric, allowing them to toast for 1 minute to release their aromas.
  4. Add the rinsed lentils, uncooked rice, vegetable broth, and diced tomatoes to the pot. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low and let it simmer for 30 minutes, or until the lentils and rice are tender.
