Ingredients
- 2 medium eggplants, cubed
- 2 medium zucchinis, cubed

- 1 tsp paprika
- 1/2 tsp cayenne pepper
Instructions
- Preheat 2 tbsp of olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté for 2 to 3 minutes until translucent.
- Stir in the cubed eggplants, cubed zucchinis, and diced bell peppers, and cook for 5 minutes, stirring occasionally.
- Add the chopped tomatoes, 1 tsp of paprika, and 1/2 tsp of cayenne pepper. Stir well to combine.
- Cover the pot and let the mixture simmer for 30 minutes, stirring occasionally to prevent sticking.
- Taste and adjust seasoning as needed with salt and pepper.
- Serve immediately.
