  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 2 cups vegetable broth
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp lemon juice

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the chopped onion until translucent, about 5 minutes.
  2. Add minced garlic, ground cumin, paprika, cinnamon, and cayenne pepper. Cook for 1-2 minutes, stirring continuously, until fragrant.
  3. Stir in the drained and rinsed white beans and vegetable broth. Bring the mixture to a simmer and allow it to cook for 20 minutes, stirring occasionally.
  4. Using the back of a spoon, mash some of the beans against the side of the pot to thicken the broth.
  5. Remove from heat and stir in fresh parsley and lemon juice. Adjust seasoning with salt and pepper if needed.
  6. Serve hot, optionally accompanied by bread or rice.
