Ingredients

  1. In a saucepan, combine heavy cream, whole milk, and sugar. Heat over medium heat, stirring constantly until sugar dissolves and the mixture is steaming but not boiling, about 5 minutes.
  2. Remove from heat and add the scraped vanilla bean seeds. Let it steep for 30 minutes to infuse the flavor.
  3. Strain the mixture to remove vanilla bean particles. Stir in rose water, then cover and chill in the refrigerator for at least 4 hours or overnight.
  4. Churn the chilled mixture in an ice cream maker according to the manufacturer’s instructions.
  5. During the last few minutes of churning, add chopped toasted almonds to incorporate into the ice cream.
  6. Transfer the churned ice cream to a container, cover, and freeze for a few hours until firm.
