  2. Divide the rested dough into 4 equal portions. Roll out each portion into a thin circle on a lightly floured surface.
  3. Brush each dough circle with vegetable oil and evenly sprinkle with chopped scallions and salt.
  4. Roll each circle into a tight cylinder, then coil the cylinder into a spiral shape. Flatten the spiral gently into a pancake.
  5. Heat a small amount of vegetable oil in a pan over medium heat. Cook each pancake until golden brown and crispy on both sides, about 3-4 min per side.
  6. Serve the scallion pancakes immediately with soy sauce or chili oil for dipping.
