- 1/4 tsp salt
- 4 medium bell peppers, halved and seeds removed
- 1/2 cup shredded cheese, optional

- Preheat the oven to 375°F (190°C).
- In a large bowl, mix the cooked quinoa, black beans, corn, chili powder, cumin, paprika, garlic powder, onion powder, and salt until well combined.
- Spoon the quinoa mixture evenly into each bell pepper half and arrange them in a baking dish.
- Cover the dish with foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil. If desired, sprinkle shredded cheese on top of each pepper, then return to the oven and bake uncovered for an additional 15 minutes, or until the peppers are tender.
- Carefully remove from the oven and serve warm.
