Spiced Beef Ribs (Ye'tsebhi Tigab)

Spiced Beef Ribs, also known as Ye’tsebhi Tigab, is a dish originating from Eritrea, known for its rich flavor and aromatic spices. The beef ribs are slow-cooked, allowing the spices to deeply infuse, resulting in tender, juicy meat that offers a taste of Eritrean culinary tradition. This dish is a delightful choice for those who appreciate a well-seasoned, hearty meal that brings a cultural touch to the dining table. Its preparation involves a blend of spices that enhance the natural flavors of the beef, making it a satisfying option for a special meal.

Ingredients

  • 2 lbs beef ribs
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp cayenne pepper
  • 1 tsp salt
  • 1 Tbsp olive oil

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a small bowl, mix together the paprika, cumin, coriander, cayenne pepper, and salt.
  3. Rub the spice mixture all over the beef ribs, ensuring they are evenly coated.
  4. Heat olive oil in a large oven-safe pot over medium-high heat.
  5. Using tongs, sear the ribs on all sides until browned, about 5 minutes per side.
  6. Cover the pot with a lid and transfer to the preheated oven.
  7. Bake for 1.5 to 2 hours, until the ribs are tender and the meat easily pulls away from the bone.
  8. Remove from the oven and let rest for 10 minutes before serving. This allows the juices to redistribute throughout the meat.
