Ingredients

  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. Cook macaroni until al dente, drain, and then mix with a little olive oil to prevent sticking.
  3. In a saucepan, melt butter over medium heat. Add flour, cooking for 2 minutes until a roux forms.
  4. Slowly add milk to the roux while whisking continuously to prevent lumps. Continue to cook until the mixture thickens.
  5. Off the heat, add shredded cheese and stir until the cheese is completely melted.
  6. Combine the cheese sauce with cooked macaroni and crumbled bacon, ensuring even distribution.
  7. Toss panko breadcrumbs with olive oil until well coated.
  8. Distribute the macaroni mixture evenly among the prepared muffin tin cups.
  9. Top each cup with the oiled breadcrumbs.
  10. Bake in the preheated oven for 20 minutes or until the tops are golden and the cheese is bubbly.
  11. Allow to cool in the tin for 5 minutes before removing to help maintain their shape.
