Apricot Almond No-Bake Bars combine the natural sweetness of apricots with the satisfying crunch of almonds. These bars offer a chewy texture thanks to the dried apricots, perfectly complemented by nutty almonds. They make a convenient snack or dessert, as they require no baking and minimal preparation. These bars are a versatile treat that can brighten a midday break or serve as a sweet conclusion to a meal. Ideal for those who prefer simple, quick recipes without sacrificing flavor.

Ingredients

  • 1 1/2 cups dried apricots, chopped
  • 1 cup almonds, chopped
  • 1/2 cup rolled oats
  • 1/2 cup shredded coconut
  • 1/3 cup honey
  • 1/4 cup almond butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Line an 8×8-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal later.
  2. In a food processor, pulse the dried apricots and almonds until they are finely chopped.
  3. Add the oats, coconut, honey, almond butter, vanilla extract, and salt to the food processor. Pulse until the mixture forms a cohesive dough.
  4. Press the mixture firmly into the prepared baking dish, smoothing the top with a spatula for an even surface.
  5. Refrigerate the mixture for at least 2 hours or until it is set.
  6. Using the parchment overhang, lift the bars out of the dish and cut them into squares.
