Ingredients

  • 3 lb beef brisket, trimmed
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 Tbsp olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 12 oz beer
  • 1 cup beef broth

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the beef brisket with salt and black pepper evenly on all sides.
  3. Heat olive oil in a Dutch oven over medium-high heat until shimmering.
  4. Using tongs, carefully add the brisket and sear it until browned on all sides, about 4-5 minutes per side.
  5. Reduce the heat to medium and add the chopped onion and minced garlic. Sauté for about 2-3 minutes until fragrant and the onion is translucent.
  6. Pour in the beer and beef broth, and stir to combine, scraping any browned bits from the bottom of the pan.
  7. Bring the mixture to a simmer, then cover the Dutch oven with a lid or foil.
  8. Transfer the covered Dutch oven to the preheated oven and cook for 3 to 4 hours, or until the brisket is tender and can be easily pierced with a fork.
  9. Carefully remove the brisket from the oven and let it rest for 15 minutes before slicing against the grain.
  10. Serve the sliced brisket with the cooking liquid spooned over top.
